Right! I’ve been doing this since the very first perfboard. It works with PCBs that are still copper-plated, too. Even layers of photoresist. Just break them along the edge of the tabletop.
Using a handsaw to do this is not a great idea. It is often little bits of glass (depending on materials used for PCB manufacture, of course).

I used to get the PCBs separated from the panel with a bandsaw which my neighbour has!
No more bothering the neighbour!
And i guess the rough Edges that might result from v grooving can be easily smoothened out with some sand paper or a file to get that factory cut finish!!
Better than a utility knife, I would recommend using a laminate knife that is used for cutting countertop materials like arborite and those types of materials. You’ll get cleaner results.
