i’m pretty much an idiot when it comes to low level electronics. Can I use this to identify a serial data stream. Will I be able to determine baud rate ?
I’ve got some projects that would push my skills to the limit and I really need to determine this.
will I be wasting my money?
The Logic Sniffer can do all of those things, but it is an experimental, open source, community supported device. If you have qualms about that, I highly recommend a different (more proven, user friendly) logic analyzer. The Saleae Logic is excellent and can also do all those things.

I agree with Ian, a Saleae Logic will be better suited for your needs, especially for serial protocols, having very deep buffers makes things easier (with the limited buffer of OLS you need to know what you are doing to be able to debug your coms).
You can also have a look at USBee SX, it’s about the same price as Logic from Saleae, and have more protocols analyzers than Logic (the electronic of both is almost the same), and it can also replay all your recoreded (or defined by hand) signals.
