I'd like to order a PCB without tin coating, because I think I looks a bit nicer on some logos.
I would like to post a link for an example but I am not allowed, sorry. Just do an image search on google for 'P1060845.jpg pcb'. The first image with the OSHW logo illustrates what I mean.
Is that possible on dirtypcbs?

Actually, it does not have to be gold, I am totally fine with copper. Is it possible to order without coating at all?

The copper will look like crap because of oxidation (even if you clean it once you get it), perhaps you can ask mention what you want this for? Dirty PCBs is not a place of special orders, if the web page doesn't offer it then it's best to assume it's not available.
There is what they call 'SMOBC' - Solder Mask Over Bare Copper. Not available from any of the prototype places so far as I know. Kind of a specialty finish. Not necessarily cheaper. Short self life unless flux coated. ENIG also has solderability issues. The nickel that must be applied before the gold layer can oxidize and turn the pads black and render them unsolderable. It's also expensive. It looks very pretty when the boards are fresh but isn't necessarily a good thing to do unless you have very fine pitch and really need the pads to be very flat.
