First, you need to find out which solder paste are you using and the temperature of your reflow soldering paste.  From my experiments to build a home-made reflow oven, I learned that it is very important to have a cooling system. You can see the cooling must be very fast as in the following picture [attachment=0] . I also bought a professional oven and I can tell you that it  has coolers that are enabled after the peek of the reflow.

LE Also I believe, your transducer may not show the correct value of the temperature. You should try to verify if the temperature that shows on your graph is the real temperature from your oven!
